Why I Love This Recipe
This slaw is fresh, crunchy, and naturally grain-free—perfect for BBQs, taco nights, or as a side for anything spicy. The avocado-lime dressing is creamy without any mayo, and the cilantro adds a bright, herbal finish. It’s a crowd-pleaser that comes together fast and holds up well.
Ingredients
Slaw Base
1 small head green cabbage, finely shredded (or 1 bag pre-shredded slaw mix)
1–2 carrots, shredded
1/4 red onion, thinly sliced
Avocado Lime Dressing
1 ripe avocado
Juice of 2 limes
1 tbsp olive oil
1 clove garlic, minced
1/2 tsp salt (adjust to taste)
Optional: 1–2 tsp apple cider vinegar for extra tang
To Finish
Handful of fresh cilantro, chopped (optional or to taste)
Instructions
Prep the veggies
In a large bowl, combine the cabbage, carrots, and red onion.
Make the dressing
In a separate bowl, mash the avocado. Add lime juice, olive oil, garlic, salt, and vinegar if using. Stir until smooth and creamy.
Toss and serve
Pour the dressing over the slaw and toss until everything’s well coated. Fold in chopped cilantro. Serve right away or chill up to 2 hours before serving.
Notes
If prepping ahead, store the slaw and dressing separately and combine just before serving.
No cilantro? Use parsley or skip it.
Leftovers hold up well for a day in the fridge—just give it a quick toss before serving.
