Ingredients
For the Bison Filling
1 lb ground bison
1 tbsp avocado oil or olive oil
3 cloves garlic, minced
1 tbsp coconut aminos or low-sodium soy sauce
1 tsp ground ginger
½ tsp kosher salt
Freshly cracked black pepper, to taste
For the Quick Pickled Veggies
½ cup shredded carrots
½ cucumber, cut into thin matchsticks
¼ cup rice vinegar
1 tsp honey
Pinch of kosher salt
To Serve
Bibb or butter lettuce leaves
Lime wedges
Sriracha (highly recommended!)
Optional: sliced green onions, sesame seeds
Instructions
Pickle the veggies: In a small bowl, whisk together the rice vinegar, honey, and salt. Add the carrots and cucumber, toss to coat, and let sit while you prepare the bison.
Cook the bison: Heat the avocado oil in a large skillet over medium heat. Add the garlic and cook for about 30 seconds, until fragrant. Add the ground bison, ginger, salt, and pepper. Cook, breaking the meat apart with a spoon, until browned. Stir in the coconut aminos and cook for another 1–2 minutes.
Assemble the wraps: Spoon the warm bison into lettuce leaves and top with the quick pickled veggies. Finish with a squeeze of fresh lime and a drizzle of sriracha. Add green onions or sesame seeds if desired, and serve immediately.
