This Greek Chicken Souvlaki is one of those meals that feels just as perfect for a weeknight dinner as it does for a casual weekend get-together. It’s packed with flavor, full of fresh ingredients, and super satisfying. I love how it brings our family to the table—dipping, building, and sharing plates. It’s high-protein, colorful, and can easily be made gluten-free or dairy-free depending on your needs!
Ingredients
For the Chicken Marinade:
1.5 lbs boneless, skinless chicken breast or thighs, cut into 1.5-inch pieces
3 tbsp olive oil
Juice of 1 lemon
3 garlic cloves, minced
1 tbsp red wine vinegar
1 tsp dried oregano
1 tsp sea salt
½ tsp black pepper
For the Greek Salad:
1 cucumber, chopped
1 cup cherry tomatoes, halved
½ green bell pepper, chopped
¼ red onion, thinly sliced
½ cup Kalamata olives
½ cup feta cheese, cubed or crumbled
For the Tzatziki:
1 cup Greek yogurt
1 small cucumber, grated and squeezed of excess water
1 garlic clove, grated
1 tbsp lemon juice
1 tbsp chopped dill or mint
Salt to taste
To Serve:
Warm pita bread or gluten-free flatbread
Extra olive oil and oregano (optional)
Instructions
Step 1: Marinate the Chicken
In a large bowl, whisk together all marinade ingredients.
Add the chicken and toss to coat evenly. Cover and refrigerate for at least 30 minutes (or up to 4 hours).
Step 2: Make the Tzatziki
In a bowl, combine yogurt, cucumber, garlic, lemon juice, herbs, and salt.
Stir until well blended. Refrigerate until ready to use.
Step 3: Assemble the Salad
Toss all chopped vegetables and olives together in a bowl.
Add feta and drizzle with olive oil if desired.
Step 4: Grill the Chicken
Thread marinated chicken onto skewers.
Grill on medium-high heat for about 10–12 minutes, turning occasionally, until cooked through and lightly charred.
Step 5: Build Your Plate
Serve chicken skewers alongside salad, tzatziki, and warm pita.
