Why I Love This Recipe
This is a no-fuss, fresh-tasting dinner that looks impressive but comes together fast. The lemon, garlic, and olive oil combo keeps the fish tender and flavorful, while fresh herbs brighten everything up. It’s light, healthy, and great for guests.
Ingredients
1½–2 lbs white fish (cod, halibut, haddock, or snapper work well)
3 tbsp extra virgin olive oil
3 cloves garlic, minced
Juice of 1 lemon
Zest of 1 lemon
1 tsp dried oregano
½ tsp salt
Cracked pepper, to taste
Optional: pinch of red pepper flakes
2 tbsp chopped fresh parsley or dill (or both)
Lemon wedges, for serving
Instructions
Prep Oven & Pan: Preheat oven to 400°F. Lightly grease a baking dish or line with parchment.
Make Marinade: In a small bowl, whisk together olive oil, garlic, lemon juice and zest, oregano, salt, pepper, and red pepper flakes (if using).
Assemble: Place fish fillets in the baking dish. Spoon marinade evenly over the top. Let it sit for 5–10 minutes while the oven finishes heating.
Bake: Bake for 15–20 minutes, depending on thickness, until the fish flakes easily with a fork.
Finish & Serve: Sprinkle with fresh herbs and serve with lemon wedges on the side.
Notes
You can prep the marinade ahead to save time.
For a one-pan dinner, surround the fish with cherry tomatoes or thin-sliced zucchini.
If your fish is thin, check at 12–14 minutes.
