This fresh and vibrant zucchini salad is packed with simple, wholesome ingredients and takes just minutes to prepare! The combination of crisp zucchini, juicy cherry tomatoes, nutty pine nuts, and shaved Parmesan is light yet satisfying. Tossed in a zesty lemon and olive oil dressing, it's the perfect refreshing side dish or light lunch.
Ingredients
2 medium zucchini (spiralized or thinly sliced)
1 cup cherry tomatoes, halved
¼ cup pine nuts
¼ cup fresh basil, chopped
⅓ cup shaved Parmesan
2 tbsp olive oil
1 tbsp lemon juice
½ tsp salt
¼ tsp black pepper
Instructions
Prepare the zucchini. Spiralize or thinly slice the zucchini into ribbons. Place in a large mixing bowl.
Toast the pine nuts. In a dry skillet over medium heat, toast the pine nuts for 2-3 minutes until golden and fragrant. Remove from heat.
Assemble the salad. Add the cherry tomatoes, toasted pine nuts, fresh basil, and shaved Parmesan to the bowl with the zucchini.
Make the dressing. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
Toss & serve. Drizzle the dressing over the salad and gently toss to coat. Serve immediately and enjoy!
Notes
Make it dairy-free: Skip the Parmesan or substitute with nutritional yeast.
Want more protein? Add grilled chicken or chickpeas for a heartier meal.
