Why I Love This Recipe

Thanksgiving morning shouldn’t feel rushed, and this is the kind of breakfast that lets everyone ease into the day. Everything happens in one cast-iron skillet, which means no dishes and no fuss — exactly what I need with two little boys running around and a full holiday ahead. The sausage brings so much flavor, the eggs stay fluffy, and the spinach keeps it light. It’s cozy without being heavy, naturally gluten-free, and low in dairy. My kids go straight for the sausage and eggs, so it’s a win all around. It’s simple, comforting, and just feels right for a slow holiday morning.


Ingredients

  • 1 lb Jimmy Dean regular pork sausage

  • 8–10 eggs

  • 1 cup egg whites (optional, makes it lighter + fluffier)

  • 1 cup milk or almond milk

  • 2 cups fresh spinach

  • 1 cup shredded cheese (cheddar or mozzarella)

  • 1 small onion, diced (optional)

  • Salt, pepper, paprika

  • 1 teaspoon olive oil (only if your cast iron needs it)


Instructions

  1. Preheat the oven to 350°F.

  2. Heat a 12-inch cast-iron skillet over medium heat.

  3. Add 1 teaspoon olive oil if the pan needs it.

  4. Add the sausage and break it up as it cooks. Let it brown and crisp — that’s where the flavor comes from.

  5. Add the onion and cook for 3–4 minutes until softened.

  6. Stir in the spinach and let it wilt. Turn off the heat.

  7. Sprinkle the shredded cheese over the sausage mixture.

  8. In a bowl, whisk the eggs, egg whites (if using), milk, salt, pepper, and paprika.

  9. Pour the egg mixture over everything in the skillet and give it a quick shimmy so it settles evenly.

  10. Optional: Cover and refrigerate overnight for a zero-stress morning.

  11. Bake for 30–35 minutes, until the center is set and the edges turn lightly golden.

  12. Let it rest for 5 minutes before slicing.


Notes

  • Toss in any veggie you’ve got — bell peppers, kale, even leftover roasted potatoes. This recipe is forgiving.

  • A sprinkle of chives or parsley adds great color after baking.

  • Serve with salsa, hot sauce, or a simple fruit salad.

  • Naturally gluten-free and very low in dairy (just the cheese).

  • Reheats beautifully the next morning.
