These smoky grilled chicken sandwiches are simple, satisfying, and packed with flavor. The homemade chipotle mayo gives it a creamy kick, and the toppings keep it fresh. Great for dinner on the deck or a casual night in.
Ingredients
For the Chicken
2 large boneless, skinless chicken breasts (or 4 small)
2 Tbsp olive oil
2 tsp smoked paprika
2 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
1 tsp salt
½ tsp black pepper
Dash of cayenne (optional)
For the Chipotle Mayo
½ cup avocado oil mayo
2 chipotle peppers in adobo, finely minced
2 tsp adobo sauce
2 tsp fresh lime juice
1 tsp garlic powder
Pinch of salt
Sandwich Fixings
4 brioche or ciabatta buns, toasted
4 slices cheese (provolone, cheddar, or pepper jack)
Tomato slices
Arugula or romaine
Pickles or red onion (optional)
Instructions
Step 1: Season the Chicken
Pound chicken to even thickness if needed.
Rub with olive oil, then coat evenly with all the dry spices.
Let sit for at least 10 minutes (or cover and refrigerate up to 24 hours).
Step 2: Make the Chipotle Mayo
In a small bowl, mix together all chipotle mayo ingredients until smooth.
Taste and adjust heat or lime juice to your liking.
Set aside or refrigerate until ready to use.
Step 3: Grill the Chicken
Preheat grill to medium-high.
Grill chicken 5–7 minutes per side, or until internal temp hits 165°F.
In the last minute, top with cheese and close the lid to melt.
Remove from grill and let rest 2–3 minutes.
Step 4: Build Your Sandwiches
Toast buns lightly on the grill, cut-side down.
Spread chipotle mayo on the bottom bun.
Layer with grilled chicken, tomato, greens, and any extras.
Top with the other bun and serve warm.
