Why I Love This Recipe

These zucchini pizza boats are the perfect balance of healthy and comforting! They’re gluten-free, low-carb, and so easy to make. Packed with veggies and topped with delicious pizza flavors, they’re a warm, satisfying meal the whole family will love.

Ingredients

  • 3 medium zucchinis

  • 1/2 cup Margarita pizza sauce

  • 1 cup shredded mozzarella cheese

  • Pepperoni slices (as desired)

  • Artichoke hearts (chopped, optional)

  • Olive oil (for drizzling)

  • 1/4 cup Parmesan cheese (for sprinkling before baking)

  • Salt and pepper (to taste)

  • Optional: Italian seasoning, fresh basil, or crushed red pepper flakes

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).

  2. Prepare the Zucchinis: Wash the zucchinis and cut them in half lengthwise. Scoop out the seeds with a spoon to create "boats." Drizzle lightly with olive oil and season with salt and pepper.

  3. Assemble the Pizza Boats: Spread a layer of pizza sauce in each zucchini half. Sprinkle shredded mozzarella over the sauce. Add pepperoni, chopped artichokes, or your preferred toppings. Top with Parmesan and a pinch of Italian seasoning if desired.

  4. Bake: Arrange the zucchini boats on a baking sheet or in a baking dish. Bake for 15–20 minutes, or until the cheese is melted and bubbly and the zucchini is tender but not mushy.

  5. Garnish and Serve: Let the zucchini pizza boats cool for a couple of minutes. Garnish with fresh basil, crushed red pepper flakes, or more Parmesan, if you like.

Notes

  1. For a dairy-free option, use plant-based cheese alternatives.

  2. Make sure to check your pizza sauce for hidden sugars if you're keeping this low-carb or keto-friendly.

  3. These are great as leftovers! Store them in an airtight container in the fridge for up to 2 days and reheat in the oven or microwave.
