These zucchini pizza boats are the perfect balance of healthy and comforting! They’re gluten-free, low-carb, and so easy to make. Packed with veggies and topped with delicious pizza flavors, they’re a warm, satisfying meal the whole family will love.
Ingredients
3 medium zucchinis
1/2 cup Margarita pizza sauce
1 cup shredded mozzarella cheese
Pepperoni slices (as desired)
Artichoke hearts (chopped, optional)
Olive oil (for drizzling)
1/4 cup Parmesan cheese (for sprinkling before baking)
Salt and pepper (to taste)
Optional: Italian seasoning, fresh basil, or crushed red pepper flakes
Instructions
Preheat the Oven: Preheat your oven to 400°F (200°C).
Prepare the Zucchinis: Wash the zucchinis and cut them in half lengthwise. Scoop out the seeds with a spoon to create "boats." Drizzle lightly with olive oil and season with salt and pepper.
Assemble the Pizza Boats: Spread a layer of pizza sauce in each zucchini half. Sprinkle shredded mozzarella over the sauce. Add pepperoni, chopped artichokes, or your preferred toppings. Top with Parmesan and a pinch of Italian seasoning if desired.
Bake: Arrange the zucchini boats on a baking sheet or in a baking dish. Bake for 15–20 minutes, or until the cheese is melted and bubbly and the zucchini is tender but not mushy.
Garnish and Serve: Let the zucchini pizza boats cool for a couple of minutes. Garnish with fresh basil, crushed red pepper flakes, or more Parmesan, if you like.
