Why I Love This Recipe
These no-bake bites are rich, nutty, and naturally sweet from coconut and cinnamon—without feeding inflammation. They’re perfect for a mid-morning boost or afternoon snack.
Ingredients
1 cup unsweetened shredded coconut
½ cup ground flaxseed
½ cup almond butter (no added sugar)
½ tsp ground cinnamon
¼ cup chopped walnuts or pecans
1–2 tbsp coconut oil (start with 1 tbsp)
Optional: pinch of sea salt or splash of vanilla
Instructions
In a mixing bowl, combine coconut, flaxseed, cinnamon, and nuts.
Add almond butter and 1 tbsp coconut oil. Mix until a sticky dough forms.
If too dry, add another splash of coconut oil.
Roll into 1-inch balls.
Place on a parchment-lined plate and chill in the fridge for 20 minutes to firm up.
Notes
Store in the fridge for up to 1 week.
For extra crunch, toast the nuts before mixing.
Want a little sweetness? Add a few drops of liquid stevia or monk fruit.
