Why I Love This Recipe


These no-bake bites are rich, nutty, and naturally sweet from coconut and cinnamon—without feeding inflammation. They’re perfect for a mid-morning boost or afternoon snack.



Ingredients


  • 1 cup unsweetened shredded coconut

  • ½ cup ground flaxseed

  • ½ cup almond butter (no added sugar)

  • ½ tsp ground cinnamon

  • ¼ cup chopped walnuts or pecans

  • 1–2 tbsp coconut oil (start with 1 tbsp)

  • Optional: pinch of sea salt or splash of vanilla



Instructions


  1. In a mixing bowl, combine coconut, flaxseed, cinnamon, and nuts.

  2. Add almond butter and 1 tbsp coconut oil. Mix until a sticky dough forms.


    • If too dry, add another splash of coconut oil.


  3. Roll into 1-inch balls.

  4. Place on a parchment-lined plate and chill in the fridge for 20 minutes to firm up.



Notes


  • Store in the fridge for up to 1 week.

  • For extra crunch, toast the nuts before mixing.

  • Want a little sweetness? Add a few drops of liquid stevia or monk fruit.
