Why I Love This Recipe

This is one of those salads that feels elevated but takes almost no effort. The peppery arugula, sweet-tart grapefruit, salty parmesan, and pine nuts hit every note. But the real star is the homemade lemon Dijon vinaigrette—it’s bright, smooth, and pulls everything together in the best way.


Ingredients

For the Salad

  • 4 cups arugula

  • 1 grapefruit, peeled and segmented

  • ½ cup shaved parmesan

  • ¼ cup pine nuts

For the Lemon Dijon Vinaigrette

  • 3 tbsp olive oil

  • 1 tbsp fresh lemon juice

  • 1 tsp Dijon mustard

  • 1 tsp honey

  • 1 tsp red wine vinegar

  • 1 small garlic clove, minced

  • Salt + pepper to taste


Instructions

1. Make the vinaigretteIn a small bowl or jar, whisk together lemon juice, Dijon, honey, vinegar, and garlic. Slowly add olive oil while whisking until smooth. Season with salt and pepper.

2. Assemble the saladIn a large bowl, combine arugula, grapefruit, parmesan, and pine nuts.

3. Toss and serveDrizzle with vinaigrette and toss gently just before serving.


Notes

  • Segment the grapefruit for the best texture and less bitterness.

  • Add avocado if you want to make it more filling.

  • You can add protein to turn this into a full meal—grilled chicken, salmon, or shrimp all work well.

  • Swap pine nuts for almonds or walnuts if needed.

  • Dress right before serving—arugula wilts fast.
