Why I Love This Recipe
This is one of those meals that feels fresh, light, and satisfying all at the same time. The turkey burgers stay juicy thanks to a few simple ingredients, while creamy avocado, homemade aoili and crisp lettuce wraps keep things bright and summer-friendly.
I love serving these for an easy weeknight dinner, but they're also perfect for hosting outdoors. They feel a little elevated without requiring much effort, and everyone can customize their toppings.
Ingredients
For the Turkey Burgers
1 ½ pounds ground turkey (93% lean)
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon kosher salt
½ teaspoon black pepper
For Serving
8 large butter lettuce or iceberg lettuce leaves
1 avocado, sliced
1 large tomato, sliced
¼ red onion, thinly sliced
Lemon Herb Aioli
¼ cup mayonnaise
1 teaspoon Dijon mustard
1 teaspoon fresh lemon juice
1 tablespoon chopped fresh parsley
Pinch of salt and pepper
Instructions
Step 1: Prepare the Burgers
In a large bowl, combine the ground turkey, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix until just combined.
Form into 4 equal patties and make a slight indentation in the center of each burger to help them cook evenly.
Step 2: Make the Aioli
In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, parsley, salt, and pepper. Refrigerate until ready to serve.
Step 3: Cook the Burgers
Heat a grill or grill pan over medium-high heat.
Cook the burgers for 4–5 minutes per side, or until the internal temperature reaches 165°F.
Allow the burgers to rest for a few minutes before assembling.
Step 4: Assemble
Layer a lettuce leaf with a turkey burger, avocado slices, tomato, red onion, and a spoonful of lemon herb aioli.
Top with a second lettuce leaf or serve open-faced.
Notes
For entertaining, set up a burger board with all toppings arranged separately so guests can build their own.
These pair well with watermelon or kale Caesar salad, grilled vegetables, sweet potato fries, or fresh fruit.
If you're feeding a crowd, the patties can be formed several hours ahead and stored in the refrigerator until grilling time.
For extra flavor, add a slice of smoked gouda or white cheddar to the burgers during the last minute of cooking.
