Grilled Spiced Lamb Flatbreads

Why I Love This Recipe

This is the kind of meal that feels a little special without requiring a lot of extra work. The lamb is packed with warm spices, the toppings are fresh and bright, and everyone can build their own flatbread at the table. It's perfect for summer grilling, easy entertaining, or a weeknight dinner that feels just a little elevated.


Ingredients

Lamb

  • 1½ lbs ground lamb

  • 2 cloves garlic, minced

  • 1 tsp ground cumin

  • 1 tsp paprika

  • ½ tsp coriander

  • ½ tsp cinnamon

  • ½ tsp kosher salt

  • ¼ tsp black pepper

Yogurt Sauce

  • ¾ cup plain Greek yogurt

  • 1 tbsp lemon juice

  • 1 tbsp chopped parsley or mint

  • Pinch of kosher salt

For Serving

  • 4–6 naan or flatbreads, warmed

  • 1 cup diced Persian cucumber

  • 1 cup halved cherry tomatoes

  • ¼ cup chopped fresh parsley

  • Lemon wedges


Instructions

  1. Preheat a grill or grill pan to medium-high heat.

  2. In a large bowl, combine the lamb, garlic, cumin, paprika, coriander, cinnamon, salt, and pepper. Form into oblong patties or kofta-style logs.

  3. Grill for 4–5 minutes per side, or until cooked through and lightly charred.

  4. While the lamb cooks, stir together the Greek yogurt, lemon juice, herbs, and salt in a small bowl.

  5. Warm the naan or flatbreads on the grill for 30–60 seconds per side.

  6. To serve, spread a layer of yogurt sauce on each flatbread. Top with grilled lamb, cucumber, tomatoes, and fresh parsley. Finish with a squeeze of lemon.


Notes

  • Ground lamb can vary in fat content, so cook until browned and cooked through, but avoid overcooking to keep it tender.

  • The yogurt sauce can be made a day ahead and stored in the refrigerator until ready to serve.

  • Don't have lamb? Ground beef works well too and offers a slightly milder flavor.

  • For extra freshness, add chopped mint along with the parsley.

  • Leftover lamb is delicious tucked into pita pockets, served over greens, or added to grain bowls the next day.
